Ringwood Brewery has owned the vineyard at Fayolle since 1997, subsequent years have seen a substantial investment in the vineyard: restructuring, replanting and replacement of all the vinification equipment bringing significant improvements to the quality of the wines. The 17 hectare vineyard is on a limestone-clay plateau which slopes gently towards the west and is well-drained. The 50m elevation above the Dordogne valley ensures a good air flow through the vines and protects against frost and disease. In common with many of the vineyards in the Bergerac appellation, Fayolle is planted with the traditional Bordeaux varieties - Sémillon and Sauvignon Blanc for the white wine; Merlot, Cabernet Sauvignon and Cabernet Franc which are blended to make up the reds.
Our wines are carefully made by Gilles Prugne, our enthusiastic winemaker, in our chai at Fayolle.
Bergerac Sec 2007
A refreshing, fruity blend of Sémillon (70%) and Sauvignon (30%), this is a light, zesty wine with a blended acidity and aromas of lemon and grapefruit.
Bergerac Rosé 2007
Made from Cabernet Sauvignon (50%) and Merlot (30%) using the saignee method., this is a perfect summer wine, with a vibrant, deep pink colour and aromas of raspberries and ripe cherries.
Bergerac Rouge 2006
Less inky intense than the 2005, the rouge still exhibits Fayolle’s inherent characteristics from a blend of Merlot (80%) and Cabernet Sauvignon – a soft refreshing red wine with light tannins and slightly spicy aromas.
Bergerac Rouge 2007
Good dark red colour. A rounded flavour with lots of fruit and a slightly dry finish. Best decanted for full flavour.
Sang du Sanglier 2005
Our special Bergerac Rouge cuvée is made from 100% Cabernet Sauvignon and is matured in French oak barrels for 12 months. This gives a full-bodied red wine with complex and intense falvours of cherry, violets and blackberries.
Blanc de Blancs
Unusually for sparkling wine this is largely Sémillon based. The ripe notes and moderate acidity of this variety gives a full palate of rich fruit after an understated subtle bouquet. It has a brisk sparkle with a mousse of tiny tongue-tickling bubbles.
Blanc de Noirs
This sparkling wine made by the 'Methode traditionelle' is a dry merlot, rich in red fruits - cherry, raspberry and blackcurrant. It has fine, lively bubbles and is unusually suited to accompanying various dishes.
Saussignac Liquoreux 2005
Oak fermented and straight from the barrels, this hedonistic wine offers plenty of honey, coffee and acacia flower flavours. This classic Saussignac produced from 100% Sémillon botrytised grapes needs to be chilled before tasting and, once opened, the bottle can be stored in the fridge for a good week without harming the quality of the wine.
Saussignac Liquoreux 2006
This sweet Saussignac wine has been made by the same method as above, using 100% Sémillon grapes, however, this year's harvest was not oak aged, making it a lighter wine with subtle hints of apricot and caramel.
